MELBOURNE UNEXPECTED – SPRING STREET CHEESE CELLAR.

Victor Persinette-Gautrez went from a cheese-obsessed childhood in a small French town to running Australia’s first (and best) underground cheese cellar at the top of Spring Street in Melbourne. He tells us about how it’s part of a network of interlinked businesses, the honour of opening a wheel of artisanal Comté and how being surrounded by the finest cheeses in the world makes him feel like he’s back at home.
